Rice with Black Beans
 

Serves 4

Quantity Ingredients Preparation Notes
1 Tbsp Oil
  •   Heat oil in large skillet over medium heat
  •   Add onion and garlic
  •   Cook and stir until tender but not browned
  •   Stir in tomatoes, beans, water and oregano
  •   Bring to a boil
  •   Stir in rice
  •   Reduce heat to low, cover and simmer for 5 minutes
  •   Remove from heat
  •   Let stand 5 minutes before serving.
1 med Onion, chopped
2 Cloves Garlic, minced
1-14 1/2 oz Can Stewed Tomatoes
1-15 oz can Black Beans, rinsed and drained
2/3 C Water
1 tsp Dried Oregano
1 1/2 C Instant Brown Rice, uncooked
