Picnic S'mores
From Jeanette's Recipe Cards

Makes 3 dozen sandwich cookies.  See options below.

Quantity Ingredients Preparation Notes
3/4 C Shortening (softened)
  •   Beat shortening until creamy
  •   Blend in peanut butter, sugars, eggs and milk
  •   Sift together salt, soda and flour.  Add to creamed mixture.
  •   Beat until smooth
  •   Stir in oats
  •   Roll out on lightly floured board to 1/8th inch thickness.
  •   Cut with floured round cookie cutter.
  •   Place rounds on greased cookie sheek and bake in 350° oven for about 10 minutes.
  •  Remove from cookie sheets and cool
  •  At picnic, place four squares of chocolate bar and a toasted marshmallow between two cookie rounds and press together.
1 C Chunk style or smooth peanut butter
1 C Brown Sugar (packed firm)
1 C Sugar
2 Eggs
1/2 C Milk
3 C Flour
1 1/2 tsp Salt
1 tsp Soda
3 C quick or old fashioned oats
3 doz large Marshmallows
15- 1oz Milk Chocolate Bars
Options:
1.  Place slice of ice cream between cookies and press together.
2.  Instead of using round cookie cutter, cut dough into 3 x 1 inch strips, use pudding in between
